Ingredients: Terra Vegetable Chips

terra chipsI didn’t like “root vegetables” except for the good ol’ potatoe and then I tried these.

It was love at first bite. Crazy, may be, but the combination of salty and sweet, flakes of coconut and crisped shavings of vegetables that almost never grace my dining room table have now come into my hands with increased frequency – at first shared and now hidden, in a secret stash in my office not far from my special chocolate bars.

May be a not-quite-so-guilty pleasure, except that I love them so much I could easily eat the whole bag. I’ve begun to brainstorm other ways to consume my favorite chip and perhaps ways to justify buying even more of them. Perhaps as a crusted chicken, or a topping for a salad.  Like Julia’s wine, my Terra vegetable chips aren’t just for the recipe alone. I may need an extra bag.

Seriously – these are the best chips I’ve ever eaten. LOVE them. Thank you, Terra for teaching me to eat my veggies. ;)
